FEC=Fast Eddies Cookshack....just a well known brand of pellet cooker. I have to say, I love mine, but have not fired it up a lot since I built the 500 gal. reverse flow to Frank's plans. Both great cookers, just depends on what you need to do.

rib roast is sold with ribs or chine bone intact, prime rib is with bone removed, rib eye is prime rib just cut into steak before cooking and porterhouse is a 1lb or more T-bone. as for cooking time and differences when I do a prime rib in the oven I set my oven for 500 and roast the prime rib for ...

Right now I am planning on cooking them (probably 5) in my reverse flow smoker. No problem maintaining 250°-300° in it. The temp that I pull at will depend a lot on how they are coming along...don't want to have to hold them forever. Also, at about $100 apiece I'm not too interested in screwing thes...

Well in this case, the only Judge involved was the customer...and they devoured it. Along with the BBQ'ed Bologna. Not sure what it is about a stick of bologna fresh off the pit, but a lot of the good ole boys around here get plumb emotional about it.

Sorry...no qview this time. I am bad about that. Midnight when I took them off the smoker, and the next morning was too much of a scramble getting other stuff done and loaded into the cambro's to fool with getting pictures.

That'll all work Frank! :) I also probe the flat end with an old instant read dial-type temp gauge that no longer works. I keep it just for this reason. With time you will learn how that probe should feel as you push it in and you'll know when to pull it. Every brisket is different so just keep pro...

Thanks dcman. Does the oak add or contaminate to the flavour? S1 is right....I think it kicks in a bit of good mix flavor.... Thanks for the kind comments...all credit to my builder and Frank's plans. All I did was throw money at it, grind a few welds and paint. It still lacks a few details to be done. I have springs for the handles...and need to get handles on the grates to ease pulling them out...plus another coat of pai...

I'll try and get some pictures of the "largely finished" product today and get them posted up. It looks much better with the front extended, woodbox on, coat of paint, etc. Down to the details now. Plus getting a few butts on there & a fire going in it. Got to remember to take pics of the racks also...
