Chimney height question

What are the advantages/disadvantages of a tall chimney? I see them on Jambos and some custom built smokers and I'm curious do they get smoke out better?

My thinking is if you keep the throat below the grate it's not as bad to have flames getting close to the meat.

I have a Chargriller that I modified the throat.(See my thread if you get a chance). I've only cooked once but I could tell a difference for the better

I make the hinges on all the grills I've sold and I also make exhaust dampers too. I first cut the hood just along the sides but it didn't close well. I welded it back down. Chargriller throat modification

A couple times while cooking, the meat was burned due to a lot of heat and fire coming out of the throat. I ran the dimensions of the CC, firebox, and throat through the pit calculator and cut a piece to help and it has worked great

Get 2 pieces of angle iron and lay one piece flat. Stand one piece up and check it with a level and a square and put a few tacks every few inches. Let me correct my earlier post. After "trying" a portractor along a deer feeder if you don't want to worry about long pipe legs and risk tripping over them try around 130 degrees. Like I mentioned before I'm not the best at angles
