About 11:30 a.m. and temps leveled out at about 235.
Holding pretty steady. Added a few sticks and charcoal since initial fire up.
Sticks alone did not get it at first. We'll see.
I'm learnin'.

Ok, Up a 6:00 am. Got the fire started, and took about an hour for temp come up to 250.
Put on the brisket around 7:00. Will check it in about 10 hours or so.

Well tomorrow morning we get our first hunk of flesh in the cooker!!
We are attempting a packer brisket! Yup, a full on, whole brisket!

Well, she's home and just about ready. Fired it up and hot burned it then steam cleaned it and seasoned it. Frank, thanks for posting this. I was doing some research also, and came up with the same basic curing and smoking method. Seems like instacure #1 (pink salt) is the ticket for curing. About 1 week in the brine solution is the concensus. Again thanks.

damn that looks good. The fresh ham idea was a discussion we had at work friday. No one, for the lack of a better term has the guts to try it. Once I learn my smoker I may have to give it a go!

Thanks first off, it is a personal build headed for the patio. It will be put on a rolling carriage. Pics will follow if I don't get lazy. I used a calculator I found online for all of the dimensions. Today I welded up the firebox to the smoke chamber. Also had to fit the door. Damn warpage, took some time, but now it fits real nice!
