I am a O/A guy and love it. I believe in a shop environment there is a place for every tool. If you have to make a choice between a Plasma and an O/A setup I feel you should choose the O/A the functionality of it out ways the plasma 10 fold. With the correct clean tip I slice through 55 gall drums ...

i gotta build a UDS i had a piece if 10 gage diamond plate rolled to 5'x22'' im thinking its going to end up 4' tall

+ 1 thats how i did mine and right where the fire box meets the cook area you can remove that plate and crisp you chicken skins get a little direct heat action

i cant say if you can weld thicker stuff with gas but i do know that you can weld thinner stuff a whole lot easier. i like the looks of flux core on thicker metal it almost looks like a 7018 pass. so i'll i can say for sure is that i dont know and ill try to look that up
