Re: 106 gallon offset build with "heat baffle box"

I'd follow the Millscale / Franklin design. Millscale attaches the firebox at grate level however the opening is 2" below it, as there's a 2" grease dam / lip all around the throat: Screen Shot 2022-08-22 at 17.49.18.png above grate level sits the baffle, measuring 22 1/2" long, 8 3/4" wide, 2 1/4" ...

Re: 106 gallon offset build with "heat baffle box"

Agreed, that's gonna be very restricted in airflow. You can make up for it with a stronger pull, but that'll move your hot spot way waaay to the left and increase the jet of hot gases

Re: Smoke Stac Collector question

Not an expert but the pattern I see on all smokers is that it should be as tall as the pipe diameter, so on a 6" ø ID you'd want the collector to be 6" tall also; generally as wide as the cooking chamber or a bit less, and long enough to fit the pipe comfortably. I feel as long as it's as tall as th...

Re: Does firebrick offer any insulation qualities?

Our firebricks come in 1" and 2" thickness, usually 8x4" in size, around 3lb each for the 1" thick ones. Shouldn't be too too much added weight

Re: Does firebrick offer any insulation qualities?

Some pit builders insulate the bottom of the firebox to retain heat from the coal bed (ie: Fat Stack); however I don't think it's that much of a game changer beyond the first couple of hours of cook—it won't be long until you'll have a good thick layer of ashes between the live coals and the metal. ...

Re: Help with Temp Variations

Mine works best with no baffle at all and runs really evenly That is one gorgeous "Millscale style deflector". I've been removing mine as well for the past couple of cooks, seems to move the hot spot further to the right although that part of the grate is still pretty much unusable. Have you notice...

Re: Is 20” diameter FB too small for 24” CC?

Nah, 20" FB for 24" CC can be fine, as long as it's long enough to make up for the volume. See Mill Scale 94; 24x48 + 20x24 IIRC

Re: Changing exhaust stack

I don't think there is a tangible, measurable difference as long as the stack is properly sized and the pit is built to draw properly. What I will admit is that it definitely looks cool.

Re: 100 lb Propane Tank Offset Build

Looks nice! I cook some mean Q on a 33gal myself, you're gonna be fine : ) the "Franklin baffle" is a flat, horizontal piece of metal, a water pan shelf if you like, bout 8" long, 2" tall and as deep as the cooking chamber; it's what Franklin and Millscale use on their backyard smokers. You can put ...

Re: Large Smoker Math

Half of a 250 tank is the outer shell, there's usually a 30" pipe inside that. However, I think the point is that above a certain size, "it's enough". Tanks bigger than 1000 gal aren't really a thing, and even without insulation a 125 gal firebox would be plenty. Even 250 gal use half of a 250 as a ...

Re: Air scoop and baffle plate

Thanks Sandro for your feed back! I checked your video, very interesting you can see some kind of convection right? Also for the throat placement would you set the opening at the very top of the FB or put it lower like 3/4 height of the FB? My reasoning would be: If the throat is at the very top of...

Re: Air scoop and baffle plate

I would say go for it and see how it works, worst case scenario you can cut it off, although when I tried something similar I didn't really see much of a difference; if you check the Franklin Baffle thread you'll see a short clip I shot a couple of days ago and you can see how air flows without the ...

Re: Baffles and Franklins New Pit

While I was editing yesterday's brisket video (which hopefully will go up tonight or tomorrow on YouTube) I happened to catch this while I was moving the coals around and some sparks flew off. It was a fast burning fire, I reckon 300f or higher in the chamber had I kept the lid closed, and you can s...

This one comment might have me making a last second change before I work on my FB. I believe the issue with the smoke profile is due to the pit's design being so different, as @Brewmaster said my 16x36 is another world compared to even the smallest of WH's lineup. I bet if I had even a 1957 I'd be ...

That's quite the huge throat, thanks for posting that's an interesting pit! Have you tried inverting your blocker device to block the top 1/2 of the throat, Workhorse-style? I did; I used to have that sheet metal thing I'm now using to cover the bottom half of the exchange as a throat baffle—it's a...
