Re: 106 gallon offset build with "heat baffle box"

That's some great work, you nailed it! That dam is dam sexy! :p Super cool logo in the firebox door, you should post more pics!

It'll be interesting to see if it needs the heat directed up or not. Btw I saw mention of the stack at 7" diameter, do you use a damper on it?

Re: 106 gallon offset build with "heat baffle box"

Good plan! The calculators are more the suggested minimum size for the throat, but yours isn't that much larger anyways so it's fine. That said a grease dam is a really good idea! I built one with the grease dam doubling as the upward deflector to the grate, I wouldn't be cooking in that area so the...

Re: 106 gallon offset build with "heat baffle box"

If I were you I'd just add the shelf/baffle Franklin/Millscale style and try it! Might work awesome as is with that mod. I don't think raising the firebox will make much difference, I mean we're talking about an inch or 2, it won't make a big difference, but it generally would have the effect of mov...

Re: 106 gallon offset build with "heat baffle box"

That's pretty good firebox height placement, nothing wrong with that at all! You should almost be able to leave it as is, adding the shelf/baffle/plate above the grate, as it is in your first drawing. It's how Mill Scale and Franklin pits are setup. How is the baffle/throat/box setup now? You mentio...

Re: 106 gallon offset build with "heat baffle box"

I noticed your firebox is lowered a little in your drawing, which is fine but keep it to within maybe a couple inches. Plenty of builders install it a couple of inches or so below grate level, Franklin firebox is double-walled, so it's also installed below grate level. Nothing wrong with directing t...

Re: 106 gallon offset build with "heat baffle box"

If you completely remove the lower half-moon with the 1,18" slot in it, it'll work perfectly! No boxed-in heat is required. Honestly, it'll work better without that piece restricting airflow. Best of luck!

Should definitely be mounted a couple inches below, or at, dead center / grate level.

Re: 250 First Time Texas Open Offset

Due to the double wall thickness of the insulated firebox that would put the top of throat opening 2" lower than the grate? Pit builders like Jambo have the throat opening at grate level, others a couple inches or so below. For me, grate level is preferred a bit, it helps keep the hotspot on the gr...

Re: Does firebrick offer any insulation qualities?

Brewmaster, do you find that you use less wood with the firebrick as well? Sent from my GM1917 using Tapatalk Maybe a bit, hard to tell. I've never paid that much attention and they're all pretty efficient in that a pretty small fire in there to keep them running at temp (which is definitely easier...

Re: Does firebrick offer any insulation qualities?

I'll also add that since your fb is 3/8" (almost) that you'll likely experience perhaps somewhat less improvement than ours, as most are 1/4" thick boxes, with one that's only 3/16". Regardless, give it a whirl and report back!

Re: Does firebrick offer any insulation qualities?

Firebricks on the floor really help in maintaining the coal bed, and temper temp-swings/stability when adding splits quite a lot. It's like adding a big heatsink in there to help stabilize things. We've added them in 6 pits total now with noticeable improvements observed in all. They'll also help ex...

Re: Help with Temp Variations

With regard to your stack, it's kind of too large to be affected by "stack effect" that much, so cutting it down probably won't make much difference, it's still a huge hole in the smoker. Try a simple wood-stove pipe damper install, only requires a small hole drilled and 2 minutes to install. 7in st...

Re: Help with Temp Variations

The difference between then and now is the amount of meat on the pit.. This is the first time doing a large piece of meat (briskets) compared to the other items (ribs, turkey breast, chicken etc) What size pit did you end up building? The pictures are deceiving on my pit... The tank is actually 18"...

Re: Help with Temp Variations

Mine works best with no baffle at all and runs really evenly That is one gorgeous "Millscale style deflector". I've been removing mine as well for the past couple of cooks, seems to move the hot spot further to the right although that part of the grate is still pretty much unusable. Have you notice...

Re: Help with Temp Variations

Hello All! I've recently created/finished my offset smoker which is pictured below. Last week I did my first brisket on there and noticed that the temps are no where near as consistent as they were from side to side. How do I correct this issue? It appears the meat is affecting the air flow in the ...

Re: 100 lb Propane Tank Offset Build

Welcome. I can say it works some good the way it is! Like really good, and with or without the baffle it works awesome both ways. preference is probably without the baffle in place. Food close to within a couple inches or so of the throat doesn't burn, and only cooks marginally slower than the food ...
