The ceramic has a much higher temp rating. Frank used mineral wool in the last insulated build for SmokerBuilder's gravity-feed model and I couldn't be happier with that. Are you guys saying that depending on the thickness of the FB plates, you may/may not have to insulate? Please explain more. You ...

I insulated mine mostly because I didn't want my toddler to get 3rd degree burns if he touched it. I used 1/4" inside and 16 GA out. I am less than satisfied with the results. I framed it out with 2x2 tubing then insulated between the inner and outer skins. I'm not sure how much the insulation helps...

As far as axle placement, I like TQ's method of notching out the trailer and moving the smoker forwards or backwards until he gets the tongue weight where he wants it. I would definitely go more on tongue weight than on measurements.

You will get the same temp stability out of 1/4". Once the metal is hot, it'll stay that way for a while. That said, with a 1/2" baffle plate it will take longer to heat up and the extra mass will take more fuel to heat up. It will also add a lot of weight to the smoker and make it that much heavier...
