Been gone a while.

I have been absent for a good while. Thanks to Frank for getting my Log in issues sorted out! Now it’s time to get back to some upgrades to my smoker that this page helped me build!

Re: "Po Boy" 80 Gal RF

Been a while. I am getting closer to having it like I want it. Took it to some friends who did 800 butts for a fund raiser and we found out that it will run 11 of the 10lb butts at a time! They ran it for 36hrs straight and it did great! So I was up at 6:45 this morning to get it going for today's C...

Re: Too much Draft?

I think complement him! :BS: all the suggestions and pointers I have got here have made it possible for me to get it to where it is now. So making it better is just one heck of a bonus! Think I'm gonna fire it up Saturday to try and regulate the output down a bit and see how it runs. Kind of makes s...

Re: Too much Draft?

Got me a plan to limit the exaust with a kind of a gate valve (sliding knife) design. I will also be shortening the stack down a little to 29 inches from the 41 inches it is now. That should get the draft down to a more manageable level. Well I guess this means I have to cook on it again this week e...

Re: Too much Draft?

You guys are NUTS! Healthy Girlfriend? And Tom you are on point there and add to it someone that does not have any experience with an offset or reverse flow smoker at all. But if I could afford to buy a finished and tested rig it would have been different. That said I didn't find out about this reso...

That is a great looking Calculator. Maybe you could add a square chimney shape? Some of us are just odd balls and don't want the same thing others have. I think that you guys have done a great job.

Nice I might have a set the correct overriders and back up lights for it. They are only a few of the 67 only parts. I had one that was a sunroof car. Called it "Ruby". Let me know if theres anything I can do for you on it.

Re: Warmer

Thanks Rick. So plan on venting off the excess heat and if need be I can insulate the bottom of the warmer to reduce the amount of heat transfer. Or open it up with a damper and be able to use that portion for an extra cook chamber. TuscaloosaQ I like the charcole basket idea too. And by the way wha...

Warmer

I have another Tank to mount vertical on top of my Fire Box to be a warmer. What I need to know is how to control the heat in that Warmer. Do I just install it on top of the fire box? Do I put an air gap with some side dampers between the fire box and the warmer? I havent looked at many others here ...

Re: Trailer build- slow going

Can you post a pic of the air inlets on the fire box. I think I need to steal this idea. Haven't seen this before and I like it! I'm also looking to use a crow bar that belonged to my father in law. Love to see how different things work for many purposes.

Re: Building My First Smoker

mine is 3/16 and I have had a little warping on the top of the fire box. if i were to build another with 3/16 i would double line the top or get 1/4 for it. the tuning plates are 3/16 and I dont have much trouble keeping temps steady. Mine is an 80 gal tank and I love the size of it. I put it on an ...

Re: Ribs are too pink

Thanks for all the responses. No wet rub at all. They were very tender and moist so I'm thinking it was the dry rub I let sit for about 2 hrs before I put them on? Not sure but they didn't make us sick and they had a great flavor so guess it is just the way it is. And Tom I have a buddy who does the...

Re: "Po Boy" 80 Gal RF

I plan to add a second shelf to this unit in the morning. How much above the bottom one does it need to be. I got it planned to go up about 5 or 6 inches from the top of the bottom shelf to the bottom of the top. I think that chickens and a normal size Boston Butt will clear this. So how far apart a...

Re: Ribs are too pink

Nice soap box. I too like ribs that pull off the bone easy! I did use a different rub and wood (hickory not oak) for this smoke. Nobody got sick and the temps were well done. Thanks for the insight.
