RC is right on with the bellies. They usually soak in the cure for 24 hrs. Since we were doing a rapid cure, we sent em to the ceiling to draw the cure in a bit faster. The gathering was a blast!! The little bit that I was there. It was great to put a face with the names. I'm ready for the next one,...

I'd highly recommend a UDS to start with. Start cranking out good Q while you gather tools and material to build the big one.

Cut it up!! 4" angle frame is plenty for the frame to stay straight. The rail is just for holding stuff in and tying it down. Once your done with your build, if there's places you can brace it do it.

How tall is your roof above your smoker? Figure the height of that and get it through the roof. The length of that stack may change your diameter of pipe needed.

I only use mesquite for beef and chicken. I use all other woods on pork. I tried mesquite on a pork loin once and the flavors just didn't jive.

Burn them a couple times. Pallets make a good hot fire. Then give it a good scrubbin with comet and a coarse brush. Add a few parts, and you sir have a new cooker. :beer:

If I'm not mistaken, it seals the chute air tight so the fuel in the chamber isn't allowed to burn.
