awesome looking pit!!! I grew up cooking on a brick pit outdoors... never checked an internal temp and di not have digital therms..... and still do not.... my Lord!!!! I am a back to the basics kinda guy...... what will they market next......

I cook brisket at above 300 degrees as many do.... never check an internal temp.... when it probes like butter I pull it.... many people are cooking hot and fast with great success..... just my opinion!!!!!

I am personally going to build a unit very similar to the one you are talking about. The simple solution to me is to put insulation between the 2 cookers. you will have insulation plus 2 ....1/4" plates separating the two!!!!! Works for me

You should be fine I generally leave a tad more gap but your cook chamber does not get all that hot. Where you will run into problems is on a firebox

Puff Sorry I have not been around here, Just saw the thread I would go with a 3500# axel width is all about preference but I would think 4ft wide would suffice. generally it would be a 46 inch spring center. with the 3500# axel you would need 1750# springs all mine come as one unit already attached....

Yes you can weld stainless to carbon all day long. You can use tig, stick, or mig. The procedure calls for using 309 filler metal but it is not necessary you can use 308 or 316 does not matter. We just built this cooker for a guy in Georgia the cooker chamber is 3/8 thick pipe 24 OD 53 long and will easily hold 20 8# pound butts. He picked up yesterday and was blown away he loves it and sent pics this morning getting ready to watch the crimson Tide roll today and cooking for the fist time....

I personally use 1x1x1/4" for my grate frames, then I use 1/1/4" x 3/16 for my rails this throws everything flush with one another. All of the previous comments are great for a grate. It is all about preference and I am anal!!!!

Yep Tyler was under his welding hood the whole time. Amazing how when we were done he pops up and says Dad I want to try some of that meat. LOL!!!!!
