Re: Black soot? All over food and smoker.

I deal with this same issue, mostly on my top rack. I basically do not use the top rack unless the food is wrapped/covered. I found it was to tall of a fire, like you said that creates it the worst. If I runna real deep coal bed and toss a split on it absolutely starts throwing soot, can see it in m...

Re: The Fox in action (Legacy 4800)

Thanks! It already has. The initial design is very dialed, if I move my air inlet 1/8 of the total opening the temp changes. Heats up very fast as well and is like clockwork for when wood needs to be added. Close the vents/dampers and it snuffs the fire, so its def air tight . Sent from my SM-A715W ...

The Fox in action (Legacy 4800)

I spent my winter building my first smoker. It is a reverseflow design from Smokerbuilder that I modified somewhat. Happy to say it works great out of the gate. So i thought I would share a few pics from my cooks so far. It sooted up on me this last cook but I think I have that problem worked out. C...

Re: Legacy 4800 Build

Why did you put all that white stuff on the ground? Gonna be a mess to clean up! Hahaha I know this!! The heat off The Fox melted a bunch of it. Tells me I should have insulated it!! I am looking at a custom industrial insualtion blanket we use onbour hight temp steam valves at work. I would rivet ...

No cooking yet, however there will be 10lbs pork butt and 5lbs of pork belly burnt ends on my WSMs. After over 2 weeks of -40°C it gonna finally be above f...

I believe I am like most with a smoker and can say I absolutely love cooking for others/groups. It's not an ego thing but a satisfaction of others delight in my food. Good job feeding the coworkers!!

Re: Cook Chamber Door Opening Warped On New Build

Ugh, I am in a constant internal struggle how to finish mine. Raw or paint. Or sandblast, spray with water to rust evenly then BLO. I live in a very dry area so I am not afraid of atmospheric attack like along coastal areas. Will be way easier to maintain to, cuz it's already rusty LOL. Sent from my...

First fire is this weekend to test run it. It's also gonna be a balmy -41°C wind chill grrr! Mild all week and falls of the charts Friday night. And thanks on the mod comment. Re: Legacy 4800 Build

Needs the two extra temp gauges, stronger pull handle and a removable log warming rack under the firebox and its a wrap!! Counter weight will be added later one, door isn't that terribly heavy. Counterweight is more of a tribute, a silver fox cnc cut from heavy stainless plate. Wide angle pic distor...

The Fox has all handle but the ones for the CC. Dampers are done as well. Missing a pic of the baffle tuning plate handle/adjusting rod out the front of the CC. Re: Legacy 4800 Build

I've come to the conclusion that things don't necessarily have to be totally airtight. None of mine are, and they cook and smoke just fine. I guess maybe the picture makes that gap look worse than it actually is. It has gap but i bought thick gasket and it all around the door. Then we added to the ...

Re: Legacy 4800 Build

Does it have that big gap on bottom? I would try to pull it in and weld some gussets in. Gasket all the way around. We put a bright LED work light inside and there is only a few spots that had a bit of light shining thru. Perhaps its my years of working with pressure equipment that makes me take a ...

Lavarock firebox gaskets. Not understanding why it won't seal? Newbie mindset here.

My handles were dropped off today. The double one is both handles for the cooker in one stand off, the guy who CNC'd my standoffs too long. Re: Legacy 4800 Build

That's a beautiful piece of wood, doesn't seem all that practical, though. What happened to the door??? I think it will work great actually. The wide end will sit to load both the CC and WC. The narrow end will be out from the CC and still hold trays. And the door went sideways with the trim. I gav...
