Re: A few comp boxes for your perusal

No doubt someone is putting in the time on keeping the chicken pieces uniform. Looks like lots of hours practicing with a knife no doubt. Chicken is my kryptonite, I have been down to the wire before and burnt every piece I had trying to get the skin right. I even had a box that scored ZERO for tast...

BBQ trailer to Tag or Not to Tag that is the Question

I am running into a whole lot of government employees who cannot answer this question. Does a BBQ Smoker Trailer require a tag. I immediately get the reply that a utility trailer does and I always answer this is in no way a utility trailer, it is a BBQ producing masterpiece on wheels. I fully plan t...

OK, the girls have got their tans working so it's time to flip and roll Maybe next time a wee bit less olive oil. I'm thinking foil tents for the bunch before they get through.

Re: Full comp practice run - with Q-View

L-) Man o man, Kingsford makes a TON of ash! - been mixing Blue Bag with lump today, but I just had to dump the ash tray because it was choking the fire. Yeesh, that was a delicate operation. :exp: I'm a charcoal cooker and no doubt Kingsford puts off some ash. I keep a small rubber mallet on the b...

The ol' Weber might be a bit small but she gets the job done. Shields up, deflectors on full ... this beast is ready to go low and slow.

Re: Full comp practice run - with Q-View

Man, I got a killer shot of the ol' Weber ready and at attention. Even have the dog on guard in the background but dang if I am too dense to get that pic from my computer to here ~x( Gonna work on it, I reckon I have about 3 more hours before they get pulled off for their final photo opp.

Re: Full comp practice run - with Q-View

Got the hens out of the brine and gave them a good oil rub and seasoning. Fired up the ol' Weber and hopefully in about 4 hrs we will knee deep in some bodacious bird. The best thing about the tornadoes this year was they took down my Pecan tree. Needless to say I should have plenty of pecan chunks ...

Re: Full comp practice run - with Q-View

When they start showing up with toothpicks and napkins you might want to consider a higher fence or plan ahead with a spare butt :D I gotta say it's looking good from here. My jr team member (daughter) put 6 cornish hens in the brine at 8 this morning, maybe I can post a few pics when they finally p...

Re: Anyone have good ideas for "fatties"

A few years back I smoked a few of these "Gyro Fatties" in some mini loaf pans I had picked at a flea market. I drilled a few wholes in each to allow for dripping of the grease, I figured they cost me a dime each so if I ruined them no biggie and the consistent shape would allow for some fancier sli...

EXHAUST PIPES - HOW MANY & WHERE

Here is a topic for open conversation. Is there a perfect location for the exhaust? I have seen the spreadsheets that help calculate exhaust dimensions to achieve air volume needed to match firebox size and cooker chamber but there doesn't seem to be a central agreement on the placement or number of...

Re: 3/8 vs 1/4 is it worth the money and weight?

Paid to talk "Q" ? USuck! :-w Yep, sucks to be me but when I get called in they pay me to sit until all tests are complete and some tests take 2 hours, brutal I tell ya, simply brutal. :-bd As for the double walled concept it totally makes sense. Fabricating a double walled entire cooker is probabl...

Re: 3/8 vs 1/4 is it worth the money and weight?

I hate to always circle back to cash but what is the pricing on an insulated rig? Only ones I have seen are the cabinet styles with all the rotating stuff inside and I'm fairly certain my wife still votes for the daughter's education over fall off the bone ribs. I'll try and track down pics of Edgar...

Re: Unusual Smoker Design?

I have seen this design twice down in Mexico. I was curious so I tried asking what the purpose was from the fellows tending the smoker (they were standing around it). Well after failing to find anyone speaking English I got lucky and saw a lady come out and place a stack tortillas on the raised "war...

Redneck Gyro Fatty

This beast aint cheap and it dang sure isn't kosher :D but you will have folks chowing down on 2nds long before they stop to ask what is in it. Blend together 1 lb of ground sausage and 1 lb of ground lamb (the cheapest place I have found for lamb is SAM's but I have to grind it myself). Pulverize a...

3/8 vs 1/4 is it worth the money and weight?

In my nerver-ending search for my comp smoker I continue to see assorted rigs with various designs and all of the really high dollar builds are 3/8. I think I will never be able to afford a full 3/8 build unless the main body is scrap pipe that is picked up for scrap weight price but I'm confident I...

Checkin' in from B'ham Alabama

I probably have the least building skills of anyone on the site but I like to cook and I am currently on a never-ending quest to find a local fabricator who doesn't want to retire off of a single build. Any chance one of you metal minded folks would be interested? I hope I haven't broken every code ...
