Bake uncovered for 30 minutes at 350F

Looks like it has some color to it.

I have the same thoughts about brisket, it is my favorite, and smoked for about 12 hours nice and low and slow is hard to beat.

I would have to say that your firebox is fine sized, the air intakes may need to have been where the air could go both below and above the grate. As for the temps I would say that you have a flow problem, being the stack is too small diameter. I have to remember that I'm creating a flow like a chimn...

That boat looks great. I know that was alot of work. I saw that you had said the boat was doing some "porpoiseing" My boat has trim tabs on it and it is easy to correct that useing them regardless of where the weight is. Just a thought.
