Well we finished fifth place this weekend with calls in chicken and brisket. The infamous GC still alludes me but we are having fun trying.

Well there has been some discussion amongst some teams here in my region on air chilled vs water chilled. Some are saying air chilled takes on more brine than those that have been water chilled. Some have even gone to weighing the thighs before and after to prove the point. Wondering if anybody else...

What brand of chicken do you all like? Also, how about air or water chilled chicken?

Well we had a great showing this weekend in Fredericksburg at the BBQ Jamboree. We took 9th in ribs, 3rd in pork for an overall 4th place finish out of 67 teams. Here is a shot of our third place pork:

Can we finally have a good competitor for the KCBS. Be nice to have a few options as the other ones seem to want to remain regional for the most part. My first comp of the season is next weekend and I am just chomping at the bit as I have am four comps behind now in the points race. Had a later star...

I know the feeling. Pork is the Bain of my existence. It is the one category I struggle with. I am working on a new profile that I hope finally gets me consistent scores.
