Hey guys I am in Memphis this week and am going to go try and find some new gauges while I am here. I do have a question about the unused space above the cook chamber where the warming cabinet usually sits, and after noticing the 500 plus degrees above the firebox I had an idea about a pizza cooker....

Just tried that with the firebox at normal height, vent shut, and door open and observed it for a while with no increase in temp spikes on the gauges. Same thing today. Won't climb as I thought it Would. Tilted rack to gain bottom clearance and nothing. Added extension to exhaust and nothing. Struggled to 250. Going to measure my FB to CC opening to see if that is an issue. Agh!!!! :headwall:

I am using a fire rack made from angle and expanded metal. My cook chamber opening is exactly the size the calculator suggested. I will add a cardboard extension tomorrow and see if that helps. Well, got this far. Got a little to go. I appearantly smashed gasket to much as I am getting some smoke out the door. I will address that next chance I get.

Well been plugging away. got the CC doors mounted,All the 1/4 plate welded on the cc door and end and back pieces to make square doors, hinges on. Looks really good

Guys I appreciate the help but what I was referring to was a "stickie" that explained each style of cooker and the perceived pros and cons of each one. It was all in one document and kind of explained the reasoning behind design changes. It may have not been on this forum. Thanks.

Also I found 2-5" bullet hinges after a long search effort and as soon as I got back I reshimmed the door for proper clearances and welded the bullet hinges. I got the firebox mated to the cook chamber, the baffle plate welded in completely, and welded an additional 15" "extra baffle plate" to the fire chamber end to lessen the hot spot. Welcome to the site slowboat, Did I read something about 400 steaks. Yikes. oh yeah we do about 2 customer appreciation meals a year and we cook ribeyes and baked potatoes, and texas toast on the grill for everyone. we started out with one small grill and now we have a 4' x 8' steak pit on a trailer.
