anyone have any idea approx on how long this will take?
In other words, do I add the pounds and figure a time with that, or do I say the 15lb brisket time will govern (and the smaller one will get done within that time) and approx the time of the 15lber?

Here is an update......I placed the wrapped briskets to see how the briskets would lay on cooking day Well, the big briskeett could not be on bottom rack (bc top rack would be leaning on it) nor top rack (bc lid would not close)....so in essence they must go next to each other on the lower ack....li...

Smoking Multiple Briskets in UDS

I've got a monster of a Brisket (15lbs) I'm gonna smoke and came accross a 8lb brisket at store. It was miss weighed and I could not resist buying...... Well I've got 2 racks in my UDS at 7" and 4" from top plus a baffle (pizza plate). What would be the best way to smoke both at same time, if I can?...

Well this is actually what happened fo me: My temp control for center of UDS was a analog thermometer. It was the temp gauge that is used when frying a turkey. Its long but was not touching any grate or anything. Basically it was suspended....and when it all stabilied, stayed in the 250 range. I use...

I'm using Head County Championship rub, setting at 225 (wanna point out there is about a 50-60 deg temp ddiff near wall and center...that's crazy to me).......9#s.........when internal gets to 155 wraping in foil with coke inside.....then putting back......at 175....unwrap......finish at 190-195.......

I put this lid on the drum....half way.....and after a bit....the blackness shiney stuff got burnt off.......will do that....and hopefully watever was on it.....will burn away......damn its hot

Damn it.......I think I did something wrong..... Well, I ran out of wood, as from story above, and I went searching for more wood. I went in my garage, and pulled out a couple 2x4s and a couple of compressed wood sheets......very small section of compressed wood......like a 3 by 4.....I broke it up ...

I am about 4-4.5 hours into my burn and am out of wood........a pic of the drum is below I dnt think that bottome third will fully get the paint off.... I used 3 pallets......flame was full blown....top 2/3rd is clean as a whistle..... Thoughts on where to go from here? Shld I get more wood? Do you ...

Thanks for the tip......here is the lid....the stuff is basically a rubber basket of sorts...that basically sticks from the back side....doubt it can stand the heat.....pun intended....lol
