Just an update once I built the diffuser plate with only an inch of gap front and rear it is rock solid. I have cooked on it about a dozen times now and it holds within +/- 5 degrees. it cooks great and I love the set it and forget it at times I need sleep... LOL it is handy to load it up at night a...

It is 14 ga. My temp probe is mounted center of the back wall. I don't see much difference in the smoke flavor, over my UDS. We have talked about putting a piece of metal on an angle on the back wall and on the door. This would serve two purposes, create turbulence in the smoke and heat, and to for...

S1, question where did you mount your temp probe? how is the smoke level with the exhaust out the top? I ran mine out the side to increase the smoke dwell time.

That is very nice. What did you have to do with the door? I'm guessing you had to strip the inside and add insulation and a new inner panel to keep it from getting too hot on the outside. yes, the original door skin, was a fiber board, I replaced the insulation and cut a new skin out of 16 GA stain...

made some more progress tonight

Got the Mineral wool installed

and the insert installed

also mounted the pellet feeder

yes the insulation was a nasty fiber something... LOL it will now be mineral wool

yes the drive will on the left side and the 5" exhaust on the right side pretty low to increase the smoke dwell time.

wanted to build a pellet pooper so here goes, thought the name 'Smokin Reefer" fits

started with a nice clean 50's fridge

got a Smoke Daddy pellet setup

and started bending up some 16ga stainless

On the handles you can go buy hickory handles for a sledge hammer they work great are sealed and dont get hot at all.

depending on the size you will need a trailer that can hold 1500 - 2000 lbs, I bought a trailer from harbor freight the largest they sell it is a 2000 lb gross weight trailer, on sale and with a coupon I got it for $275.00, I beefed it up with deck plate and some angle and welded the whole thing tog...

I am pleasantly surprised how well it did in the cold, once she got to temp she ran at 225 to 250 no problem.

got more done today, should be ready to build a fire in it tomorrow to let it burn for a couple of hours for the seasoning before the first real smoking. I think some salmon will be the first run, then a pork butt and then on to the ribs... only problem, the damn weather is cold here about 12 degree...
