I used to date a girl that was flat on both ends.... Don't get me wrong, she got the job done... But the curves are better flow! In all seriousness I don't see any difference between my pit (curved tank) and my buddy's flat. Go with 1/4" the cost difference isn't that big.

I used the big white cutting boards for my prep table. They are $8 a piece at SAMs club. We have two sets... Raw meat and cooked meat. I have a turkey fryer burner up front. We didn't think it was a big deal, but we took it off and we really missed it.[

Love mine. I put a damper between the fire box and main cook chamber. We cold smoke fish in it in the fall. As said above different meats take different times. The cabinet helps to hold onto things. We also use it to pre cook things or to hammer on foiled up pork butts when space is at a premium.

I have a 24wX18dX40h cabinet, I have 6 - 2"x3" sliders on the bottom and a 5" round in the door. More inlets don't hurt if you can shut them off. Temperature control is everything!

So it starts out simple... A little warming cabinet to use some of that waste heat. Then the idea of maybe using it for a cold smoker. The "legendary" frank cox might just have what you need. Otherwise you have to run the calcs through the calculator, look at a whole bunch of pictures, fudge a few things here or there, and then act like you meant to do it that way!

120's make a great unit. They can go patio or trailer. A 30 wide lets the ribs stack front to rear and they work great. I'll take one for the team by jumping on that grenade if you don't want it!

The meat keeps falling down and the door won't stay closed. The paint on the roof of my truck is blistering off, and my legs are killing me from climbing the ladder.
