This winter has been a killer in the furnace business, Busier than hell! I'm ashamed but I still haven't completed the backwoods clones. I had to put my name in for a "you suck!" award by showing a pic of my buy today, 2 Cambros and a Carlisle hot boxes! Go ahead.... http://img.tapatalk.com/d/14/01/...

Found a solution to temp problem... BUT..

I thought this was a stumps clone. All you need to do with your wood is put it in the ash pan and as the charcoal burns small coals fall into the ashpan and smolder your wood so you get your smoke. No need to start your splits on fire in the Ashpan. I just use wood chunks about the size of my fist.

Re: Food for the 2013 Gatherin'

If anybody would be interested in a hot and fast brisket the way I do in competition I would be up for giving a tutorial on that? I had planned on bringing my gravity clone.
I plan on coming in Friday afternoon or so.

Roxul Is available in rigid sheets in many thicknesses, this is what I used in my clone build. 2x4 sheets and I believe a bundle was 5 pcs.

Hot and Fast or Low and Slow???

Thanks Frank, You weren't supposed to tell! To be totally honest the reason why I put the pork butts on at midnight at a lower temperature is twofold. At 6 AM contest day I have a lot going on and those are just two less things I have to deal with, the second reason is I like the bark that forms on ...

Hot and Fast or Low and Slow???

Ribs and chicken @275, I start my butts @230 then ramp up my cooker to 300 when the briskets go on.
Chicken thighs 2 hours
Ribs(st. Louis) 4 hours
Butts 8 to 9
Briskets off the cooker and resting in cambro in 4 to 4.5hrs.

Hello from NC

Welcome aboard! Competition barbecue is addictive, I started about 2 1/2 years ago in KCBS comps And can't get enough. I use a gravity feed clone that I built And the satisfaction of hearing your name called out of something you built is an unbelievable feeling.

Cut & weld or brake?

I picked up some 1/8" sheet That I'm going to make into a Santa Maria Grill. Here's my dilemma, our big power brake at work is down and I will not be able to bend this plate at the shop so my options are to cut the plate into panels with my evolution saw and weld them together or take it to my buddi...

I found a couple 4x8 sheets of 1/4" steel tread plate. He wants $150.00 a sheet, is this a good price?
