In retrospect, I think I probably used too much charcoal... It was very early in the AM for me. I filled the basket up with a mixture of lump/briquets, whereas when I was seasoning the drum I used probably 1/2 that much and it kept a constant temp for 8 hours at least, before I went to bed. And then eat it? Will it pull apart, or should I chop it? Oy... My other R2D2 smoker would never get hot enough and this one is too hot... Guess I need to invest in a separate digital thermometer for the smoker temp.

OH NO!! At 4 hours, I mopped my butt again and threw on some more rub. I then added the temp probe into the meat (somewhere I read not to do so until after 4 hours...) and it went off crazy beeping saying the temp was 202*!! I thought perhaps it wasn't working correctly because I had tried to use it...

Well, it's been 2 hours on the heat. Just mopped for the first time and added some more rub. Temp. spiked to 300°, and have been trying to get back to 250° for the last 15 min. Has been at 260° for the first 2 hours.

1st shoulder on UDS

Hey all. It's bright and early (5am) and I'm prepping my shoulder. I've got a 7 pounder that I ned to be done by 2:30 today so I can take it to a homebrew club meeting. Guess I'll be citing it close!

OK. When you say a clean cooker is a happy cooker (paraphrasing), how do you go about cleaning your UDS after each use? With my Brinkman R2D2, the only cleaning I ever did was to the grate and the charcoal/water bowls. Should I do more to my UDS?

Progress report. Kept 250* spot on from 4:30-7:30. At 7:30, it had dipped down to around 240* so I took off one of the caps to get some more O2 into it. Went out 30 min later and it was up to 300*... So, I put that cap back on and it was down to 280* about 10 minutes later. Checked 20 min after that...

Sounds good. Holding steady at 250° for the last 35 minutes or so. Has started raining/sleeting now. I've got the UDS under my portico though.

Even though there's a winter storm coming this evening, I thought I'd get my UDS seasoned. Temp outside right now is 45°, temp inside smoker is just about at 250° after 30-35 minutes of all valves open. I am supposed to to keep the exhaust open, correct? It's supposed to be almost 60° here on Friday...

But my grill grate is only about 12" from the top of my charcoal basket... That's if I completely fill the charcoal basket up with charcoal.

EDIT: I went down and remeasured and I have more like 13" clearance.

I had thought about a diffuser plate anyhow. I actually ordered a 22.5" stainless weber "ash catcher/pan" for next to nothing. Everything went fairly smoothly. Had some trouble getting the conduit nuts as tight as I thought they should be. So I just got em as good as I could and filled in the gaps with hi-temp silicone. Didn't need the spacer washers from what I could tell? So didn't use any. Hoping my thermometer placement...
