The 2 side pieces warped when I was welding all the angle iron pieces for the racks, nothing a 100 ton press couldn’t fix. I was surprised by how much I had to push it the other way to get it mostly flat again

Got the sides of the cook chamber done. Adding the rails for seven shelve was pretty tedious. Baffle plate is 1/2”. Hopefully the fire box parts are cut out, should be bent by the time I get to work.

I got a pile of stuff waiting for me, hopefully I can get stared monday.

I found this perforated sheet for the cooker shelves. Thought it might be easier to clean than expanded metal.

Well, this project got greenlighted. Ordered my material today. Have access to a brake and shear. So I need to work out my bends to get the most out of that. Should be able to save some time on welding.

This is a union shop, so donating time doesn’t really work. Anywhere else I’ve been that might be ok. The people up in the office are dictating what we cook, I can only attempt to offer advise. Has any tried using a cold smoke generator with a pellet grill? I've cooked on pellet grills, but never owned one until last night. Turned out great. Coulda went with a bigger pig. This 75 pounder went fast. I used the same recipe and cooked it the same as the 4th of July pig. Came out pretty much just as good. I'd say I have brisket, butts, and small pigs figured out. Need to work on ribs.

I used 3/8 glue on rope gasket, glued the gasket on, and set some plastic wrap on the fb, set the wet door in place. Put a few pounds of weight on while it dried. We're just getting going, trimmed , injected, resting. Now it's nap time. Gotta start up again around midnight to make the reception on time. here is pigley all ready to go. Looks like I can get a little more pig in there.

When I did mine I was thinking the same thing, then I got tired of thinking and cut the hole in the tank oversized a little. Put the pipe in, leveled it up and welded the slight gap shut. Then ground flush on the inside.

A little of both. I gave the pig a pretty decent amount of cider vinager / apple juice based injection. I wipe off the excess leakage after injecting and an over night rest, pat It dry the best I can, apply the rub and smoke it. I try not to poke any holes in the skin, keep as much juices in as poss...

Last time I put some sacrificial ribs under the spine, cooked it belly up. Lots of liquid in the cavity. Didn't have any problems with dry meat. Everything was nice and juicy. Have not, Sounds simple enough. Probably why I never thought of it . I usually over think things I'm building. Easy enough to toss in a can of biscuits next burn. Have this weekend to do any testing and learning. Have a pig to cook next weekend. Might add that shelf in front of the doors.

If I start messing with my dampers when I add wood, it might swing around 15-20 degrees side to side. It seems to like the exhaust damper closed just a little. The temps are pretty stable and don't swing wildly. They come back in line with minor adjustments. I got my second maverick in the mail yest...
