Not sure what you mean by rotate the racks. All the racks are interchangable except for the lower rack which is what I place the water pan on.

I have 3 racks for food and the one for the water pan so 4 in all.

The one thing I notice on the Clones you all build is the "Heat transfer channel" I like that better. I used a tube like Stumps uses and ended it about mid chamber and use my water pan as a deflector. I like the channel version as it looks like it would distribute the heat more evenly. I'll give it a look...

Here is a dumb question...haha. What exactly does "Double Pan' stand for?

Guessing it means you can fit two of some sort of pan in the smoker but it is just a guess. HAHA

Is the chute square? Have you had any problems with it, jamming etc? Yes the chute is 8 inches square. The only time I had an issue is when I tried some lump mesquite charcoal. I seasoned it and ran it a couple times before welding everything off and adding some handles. Everything ran great so no major changes were needed!

For the door seals on all three doors I used 5/8" tadpole fiberglass seals and it is held in place with 1/8" by 1.5" aluminum strap. I used self tapping SS screws to hold it all in place.

Then the skins...

I used 10 gauge plate for the siding. Probably a little overkill but I didn't want to have to use alot of bracing so I could fully insulate the cooking chamber.
