Starting a mobile bbq business

Thinking about doing a 250 gal propane tank smoker build and doing a mobile bbq business ( ya know graduations, weddings stuff like that) anyone know how much hassle it is to do as far as health dept. regulations ect..???? Any insight would be welcomed. Thanks in advance!

Ha ha get that stuff outta yer painting area and life will get better. Silicone sprays are the worst. If ya wanna jack up a body shop go in and spray some silicone around , they will get fisheyes for weeks. Had a friend of mine who's dad ran a body shop and he would send his boys over to the competi...

I been doing mine like this. I take them out wash and dry em off put my rub on them then I put em on the smoker at 250 degrees a couple hours till they get to around 180 degrees. Then I foul em and throw in the BBQ sauce . Then I'll let em cook another 2 hrs at 250 or a lil cooler . Then Bam fallin ...

Some of it is in the test area if ya wanna check it out . I ended up trying to cut and paste it and ended up loosing a lot of it in the process...

I was thinking about getting an old fashioned metal milk crate to use for a basket . Weld a little flat stock on the sides and slide it in on angle iron . Not sure how it would hold up of how long

Okay well ,, tonite I did another burn with my new firebox vents and the added chimney length ... Seemed to do well but I think I have some crappy wood, have to go visit my brother in law and get some good wood, then try again. I will keep ya posted. One other question for you all . Yeah I went out the next day and all the paint wiped off of it like a chalky powder kinda wierd if ya ask me, but it all came off .

Gotcha frank I understand , my vent is truly 3inches I used a torch for that hole. I will do the stack addition today and the vents and do a test burn. That should take care of it

I cooked in it yesterday and it didn't do too bad just had to babysit it a lot up and down temps . I knew I needed vents but didn't wanna overkill it.

Also where would be the best places to put the intake holes at? The door or on the sides ?
