I'm gonna try the maze. Have a bunch of extra fire brick laying around, maybe i'll just line them up on the existing grate. Might not be the best, but this is more proof of concept. I'll post back in a few days after a trial run.

Thanks for the replies. Wonder why he angles the tongue down? Any specific way he loads the lump or just throws it in a "basket" and let adjust the air to where he knows will burn at his desired temp?

These recipes will make you a red sauce. If ur looking for something easy, order a few of them dry seasonings from desert garden. Getcha some NM chili powder if u make chili too! U wont regret that order

I think my favorite thing to cook is corned beef/pastrami. Its so easy to make

I also wont pretend i make this every time. If i am lazy, i reach for a package of desert garden spice mix. Its pretty dang close. I never tried it without NM ingredients, but i def believe their chile's taste different. Sure it is still good without the NM ingredients....but i would highly suggest ...

Long weekend in KC march '15 ?

My father is in KC until early april, i am thinking about going out for long weekend in march. Any weekend in march? Figured id ask before randomly choosing a weekend

Cooked with oak this weekend, super dense stuff. It was cut early summer '14 and seasoned to 17%. Had a good bed of coals, but each time i added wood it smoked (a little gray) for maybe 10min. Should i want to clean this smoke up, if yes, how? It did help when i cut splits down to about the size of ...

It was maybe open 90%? Not sure that made a difference lol. Middle rack cooked best. Couldn't put stone on damper, restricts too much air. That would prob work if I had more coals but the family was hungry and it was late
