I built a reverse flow smoker out of a 250 gallon tank using feldons chart. Not I need help on what you guys do to light it and keep it up to temp... I like to smoke at around 225 Do you start with charcoal, then add wood? How much of each? How much do you typically add per hour? I know it is differ...
