Re: 120lbs of Wings

All I have for fryers are 4 fish fryers. I figure once I pre cook half of the wings and cool them. I would load up each fryer with 25 to 30 wings and fryer @100 at a time. I got plenty of assistants to help. The friend that I'm cooking for likes to over do it a little bit. I told him that for 100 pe...

I cook everything expect for 9 racks of ribs. We had a lot of food left over so most people were taking a ...

Re: Saw or Plasma?

I love my Milwaukee metal saw. I have a plasma cutter as well but the saw does a nicer job. I key is to take your time when making your cuts. Make your cut and let it cool down for a few minutes before your next cut. I did all of my cuts for FB and CC with the saw. I used three sheets of 3/16and two...

I agree they should be okay. Flipping them the other will give you more strength. Adding gussets will help as well.

El Gato- I bought them at BJ's and they were called beef short ribs. They looked more like a dinosaur rib. They was big and meaty.

Re: Watcha cookin' for Memorial Day weekend?

Yesterday I cooked a couple of Beef Tri Tips. First time cooking them and they came out awesome. Took one over to a cookout and it was gone within the hour. I put a nice rub on it and smoke with a mixture of oak, cherry and hickory. Today I will be smoking a couple racks of beef ribs and some chicke...

Re: 2-Stroke Door Cutter

noXcuse- Don't know if you cut your doors out yet but I have a Milwaukee 8" Metal Cutting Saw. It makes some nice cuts if you take your time with it. It shouldn't warp your door either. Cool to the touch once you make your cut. Let me know if this will work for you.

Re: Reverse Flow Smoker

Quick update on yesterday cooking. I smoked 11 butts, 16 of 24 racks of St. Louis ribs and 30lbs of wings. Things went a whole better than last week test run. I'm thinking that I had a problem with the air intake on the firebox last weekend, so i change the way they open. Before they open from back ...
