Puff, would you mind posting the link to the top 25 places around Austin? I would like to read. I live 25 miles out of Austin and have ate at nearly all the BBQ joints… with the exception of Franklin's just can't find the time to stand in line.

If you are building a smoker, then I am not sure the advantages of using a rotisserie. Aren't rotisserie used when the heat is directly below the meat? If it is an offset or RF smoker you should have consistent heat through out the CC. IMO.

Ok... so after a couple more fires, I have got it dialed in on the size of fire I need to get it up to temp and stay there. I need to upload some new pics, as I have the thermometer installed and only have about a 2 degree difference between each end of the CC on the smoker side. My wife says it loo...

I must say I like giving Frank a hard time. But the shirt he sent me is a nice shirt even if it doesn't have a pocket. It is well made and my wife will let me wear it in public. :)

I also think that the longer the knife is the easier it cuts the tender cooked brisket. I like a 10 or 12 inch chef knife.

CRS I have that circle cutter but when I try to use it my plasma cutter acts like I don't have a ground. Any tips for use would be appreciated.

I got the counter weight's on the doors, along with the handles. I did a test burn, and think I am not getting enough draft. The smoke doesn't clear up. but if I open the door just a crack it clears right up so, I am thinking I need more draft. I am going to do a couple more test before I make any m...

I was able to get the firebox latches welded on last night. So firebox is complete. Moving to CC to install BP next and then a test fire.

I like to put a heavy pepper light salt rub on it cook fat side up at 225 to 275 until internal temp of 130 pull it off let rest and then slice. I have not tried the sear... will have to on the next one.
