I've spatchcocked for several years. The meat stays moist and the skin crisps up (at least it does in my reverse flow). The added benefit is that it doesn't take as long start to finish.

Almost every camper has an awning like that. The one that I've had have been surprisingly tough...just don't leave them extended in high wind situations and I think you'll be good.

I've run both and prefer briquettes. In part because it seems to burn hotter and more consistent. I actually have a tough time maintaining 250 in the cold weather with lump. The trailer one actually got parked in the barn and safe from the snow drifts for the winter for a change - it typically gets fired up to make jerky if the hunting season is successful. The GF will get put in the car garage and will most likely get used for Christmas. Rusty is in the wood shed ready...

I measured my gas grill and went from there. To me - 40" seems high, especially considering how high you'll have to reach to open up the cook chamber door. I think mine is set at 36".
