Thanks for the condolences. His loss left a huge hole in a lot of people's hearts, which is a testament to the kind of guy he was. He farmed his whole life, raised 8 kids and had 22 grandchildren. I put two in mine, but it's a little bit longer that yours. I placed them between the two cooking grates so they would be as close to the food as possible. When I cook I have a space temp probe with my iGrill that I hang just under the top grate in the center of the smoker so I have a temp reference...

Ditto on including the boys...great to see them working with supervision.

My advice is to size it the same as the throat and experiment from there. That's what I'm doing now...

I only used 1/4 for my baffle plate and the vertical side that the throat is cut from...everything else was 3/16 and it seems ok so far.

Here's the end result...good food, a lot of happy people and....some leftovers!

Here's 5 hours into it...when I put the turkey on.

Twas the night after Christmas and all through the house
Not a creature was stirring...except for the guy with a brisket to smoke.

It doesn't have the same ring to it...does it?

Here is my first brisket. I plan to smoke it up Saturday for a family Christmas...anyone have any advice? I have a 20 lb turkey for a backup.

Check out some of the maple syrup evaporators. They use an external float box to maintain sap levels in the pans, it might work for you. www.mapletrader.com and http://www.sugarbush.info are both good places to look.
