It's a pretty cool grill for sure. I like the idea of converting it to a smoker but see a couple challenges...1st is that the lid open at the center of the barrel. It would let all the heat out when open and if you wanted multiple racks you would have to come up with something unique to hold them up...

You can, but the heat that it takes to burn wood cleanly would be more than a cabinet (especially an insulated one) would be able to use. When you choke down the fire you'll get sooty smoke and a bad product.

Making it 4-6" taller is my recommendation to give you a little more room between the racks. I have trouble with larger butts rubbing against the upper racks. I am not too familiar with the term "Stall Temps". I am guessing that means that it gets too cool and is out of the desired heat range ? Sorry about the (some might think ridiculous) question. If you designed your removable baffle plate to contain all your grease it should work good too. Conventional smokers just add a grease dam before the firebox to keep the grease from burning on there, they are just as safe as a reverse flow if designed right. I'm still a reverse flow fan though...

I had to guess at dimensions, but figured your throat should be about 77 cm2. Not sure if I got the dimension correct though.

I smoked leg of lamb once...I intended for it to come out medium but lost track of time and it came out well done. It left an odor that I didn't like, so I was glad I didn't smoke it with anything else. I have no desire to ever try it again.

Cube them up in about 3 x 3 chunks and bury one or two below your charcoal. I learned the hard way that putting them on top will soot up your cook.

It looks right to me. The throat is the opening from the firebox to the cook chamber and it's OK for it to be bigger than the calculator states. In your design I would suggest your reduce the size by making the throat hole shorter. You'll have a lip under the baffle plate and that's a good thing - i...

I'm fairly confident we have a solution! I haven't touched it for 10 1/2 hours and Voilà! I have a good burning fire and a pile of ash.
