Re: Pork loin!

Didn't get at it yesterday, I took today off and will cook it up this afternoon. If it looks half as good as the ones in the pics above we will be happy.

Re: welder blows breaker

Thank you for the tip about the clamp cable, I will cut some of the cable . I found the total draw of the welder is 47 amps at max output, not the 27 amps I was told. I will have to change the breaker from 30 to 50 amps. I'll need the breaker and three feet of Number six wire. Funny the previous own...

Re: Pork loin!

I love this site, I bought a pork loin yesterday and thought I'd better check to see how the heck to cook it and there it is with great picks. It's going to be our Easter meal. Couple of questions, Temp at the usual 225 deg? usual amount of smoke or a bit less/more? Did you put on the same rub you w...

welder blows breaker

Good morning, I am a novice welder, I used a mig welder to build my smoker and have learned a bit but still far from good. I have since obtained a 225 amp Fornay "Spitfire" AC stick welder and I'm in the process of repairing a Bobcat bucket. I cut out the damaged areas and am welding 1/4" plate for ...

Re: Beef equivalent of pork shoulder roast

Well, I've done a lot of brisket just thought I'd try something up on the shoulder and compare it to the way a pork shoulder cooks. Stopped at the market today, they had what they called a chuck bottom blade and a chuck oven roast. They were priced about 15% apart. I didn't have time to ask any ques...

Beef equivalent of pork shoulder roast

Pretty much everyone I know has done a pork butt. I am not a butcher but I think a beef shoulder is called the chuck. Out of the chuck section comes the pectoral, shoulder clod, cross rib, boneless top blade, boneless bottom blade, blade, etc, etc. What roast or cut would one buy to get the equivalent ...

Re: Controling amount of smoke in a stick burner

Seems that way. I'm a little disappointed the Alder is not working out as the source of heat, I have so much available. Maybe after it dries more I will get the blue smoke needed. I don't mind if I have to keep feeding it as long as I'm not spending more on wood than meat. The Alder gives a nice smo...

Re: Controling amount of smoke in a stick burner

I got a chance to use the smoker last sunday. The plate I welded under the top of the open end of the cc did reduce the temp of the upper part of the cc. I cooked for three hours and the area above the upper grate stayed about 10 degrees cooler than the main grate. I forgot to take off the two inch ...

Re: Controling amount of smoke in a stick burner

Wind at 48 MPH, trees cracking and limbs landing all around the truck, didn't stop to smell the bacon. I bucked and split a bit of it when I got home just as it was getting dark, smelled good, but so does the Alder. I found a guy with a cord of Garry Oak over on the big island, I hope to go over on ...

Hmm, my last try disappeared i'll try again.
What about Wild Cherry? I picked up a few chunks today while spending my shift cutting downed trees off the roads.
They looked like Birch to me when I first moved here but the locals tell me it's Wild Cherry.

Re: Use baffle plate as water pan?

And there was a bonus. After I burned out the thing and had a few practice burns the door was not seated well. It fit tight all the way around before I heated it up but started to lift in the bottom left corner. I suppose all the heat was relieving some stresses from rolling and shaping the tank. I ...

Re: Use baffle plate as water pan?

I found a piece of 1/4"X1" plate and welded that onto the inside of the door. It angles down at about 30 degrees and is inside the tank about 3/4". I havent tried it yet but I hope the water will run down the lid and drip off into the tank rather than run down the outside of the tank below the door.

Re: Controling amount of smoke in a stick burner

I cut another piece 2" wide to fit under the first plate. I just bolted it in for now. The first plate stops about one inch above the top food rack, the second plate is about level with the bottom of the top rack. I will try it with just the top plate then with both. If both works better I will weld...

Re: Controling amount of smoke in a stick burner

Mine's a 51, same year I was born. Those are some very nice bikes, that bi-plane looks like a Stearman but has an engine cowl and struts like Waco, tail looks like it's off a Stinson, I'd have to guess Waco. Hi Jack, shmy jack! You can attach great photos like that any time you want as far as I'm co...

Re: Controling amount of smoke in a stick burner

Well I know a lot more about the proper use of a dial bore gauge, micrometer, torque wrench and other hand tools than I do about anything involving welding, but you are correct I was happy with my smoker build. I also learned a bit about welding and have a lot more respect for those who do that job ...

Re: Controling amount of smoke in a stick burner

Well I'll give welding that piece in place a try. I was going to cut a deeper one so the smoke and heat would have to enter the CC even lower but that one is already cut. I can always add to it if calls for. Those con-rods are from my 1968 Pontiac 428 engine. I just needed something to lean the plat...

Re: Controling amount of smoke in a stick burner

Nine mil, that's about a third of the population of this whole country. I go to Seattle once in a blue moon, that many people jammed together is kind of hard to take for more than a day. I did a cook on the smoker yesterday using charcoal as the fuel, and just a little Alder for the smoke and flavou...

Re: Use baffle plate as water pan?

Good Idea about the pans. I did a burn yesterday, after the smoker was out in the rain for a week. The water from the humid air condensing on the inside of the lid and running out onto the shelf made a heck of a mess, I can imagine what it would be like with the tray full of water. I may have to wel...

Use baffle plate as water pan?

I have a 2" high strap welded to the end of my baffle plate and a drain pipe welded to the plate, as I've seen on other builds. Do many of you fill that with water while cooking of do you just leave it dry? I think I read somewhere that it is used as a water pan.

Re: Controling amount of smoke in a stick burner

Thanks for that, No I wouldn't think of putting fir in my cooker. Real hardwood is rather rare here. We have some broad leaf maple but it's a soft maple, not the same as the eastern maple, then some gary oak which is protected by the tree hugging Govt. The only time I've seen hickory is on an axe ha...

Re: Controling amount of smoke in a stick burner

Well I've tried four more practice runs, then cooked some ribs. I started a fire and kept adding wood to try and get a bed of coals but the wood just burns to white ash with no coal bed.Could be the wood type, Alder. I've used it my air tight in the house as it burns clean with no black soot. It doe...

Re: Controling amount of smoke in a stick burner

Well that may be my problem, I'm not getting a bed of coals with this wood. The sticks, splits?, are burning down to ash with no real coak bed. Even with the vent closed down to only get 190 degrees. I'll have to work on getting a coal bed then adjust for the desired temp.
thanks
