I love me some beef short ribs!! The best advice I can give is, use Plate End beef short ribs instead of chuck end. You can tell the difference by the bone shape, if not specified on the label. I feel like a dummy for taking so long to use a firewood grate in my fire box. Just picked up a cheapo version for a regular home fire place and I am blown away by how much more controlled the burn is and stable my temp is. x_x somebody should have slapped me in the head a long time ago :headwall:

I have had that exact model for about 7 or 8 years, they are great little smokers. the only item I have had to replace is the lower panel with the smoke chamber thermostat on it. My Bradley I my go to smoker when I do not want to fire up the big competition smoker. Chicken looks really good too!!
