Boy I feel like a stranger on here... I am ashamed to say that my poor UDS hasn't seen smoke in awhile.... But thats behind me now... Armed with my iGrill and my new Holland Grill as a companion to the UDS... I plan to grill/smoke my way back into everyone's good graces! ;) Let's get it started off ...

Made those boneless thighs again tonight.... Grabbed a pic fast before the hordes gobbled em up!

Oh man oh man..... I made a whole barrel full of BBQ Boneless Chicken Thighs on my UDS tonight..... and they were SO good. My phone was in the house charging.... so no pics.... but I just wanted to say that I can't believe how great the food keeps coming out of this UDS. I also smoked a Salmon Filet...

While this is technically a leftover... I think it Holds it's own for a killer meal.
Wife took the smoked brisket and left it in a croc pot on low heat for a few hours with BBQ sauce brown sugar and butter.

Then I put it on my nachos!

Done! And man is it good!

Pork loin on the left, beef brisket on the right. Dry rub on both.
Trying two different rubs... We'll see how it turns out later... More pics coming.

Easy instructions..... and it all worked according to plan.
All all seasoned up.

Starting my first smoked meats. I got some burgers on there, some brats.... and a pork loin.
I am so super excited!!

Well today, Valentine's day, is the first step in my journey to the perfect smoked delicacy's. I Just got my UDS (Ugly Drum Smoker) all set up on my BBQ Pad next to my Grill... Ill post a pick soon. As an unofficial taste tester (Thanks Frank) I can tell you first hand....even a day later, those ribs were AWESOME!
I will be dreaming about them tonight....
