Can anyone give me an estimate about how many sticks it will take to keep up to temp for a couple briskets and a couple of shoulders.

You can pop in the dimensions of a 200gal tank in the smokebuilder calc and it will tell you what size FB you will need. Most people try to get it over-sized 5 to 10%

As Long as the Sq In is the same you are good to go just don't for get the grease dam. Just a small thought 11 1" holes lot of fabrication. Why not same surface area less holes in same location?

My intake is at 100% on one side below the lob basket. I'm still debating on whether to put a smaller intake on the door more or less to help push/direct smoke to the CC
