That is one of my favorites to cook. I follow the same recipe! It's just so damn good!
I take some of that fat, throw it in the pan, render it down then make some dirty eggs with the meat! Man... pastrami and eggs.... what a great way to start the day!

15 hours on the drum at a consistent 225° Chilled it overnight and steamed it up to 203° for dinner tonight! I started one with applying the rub on Wednesday! It was a 19lb corona beef. Cut about 4 lbs off the cap still leaving about 1/8- 1/4 of fat still on it on. I think the drawings are perfect. Just like USD. Plain and simple. Squiggle... I love the hook idea, but looking at it, you are hanging the inside of the lid up against the side of the drum. The lid gets pretty greasy "seasoned" and depending on the finish you are putting on your drum, it looks like...
