Grate looks good the only issue i see is that mesh like that is harder to clean. Might be easy to clean with high pressure machine.

Cool thank you. Just tried it out and it's great. Only question. Is it better to have our not have a dam. It's it necessary on a reverse flow as the baffle plate will have a dam to stop any liquids going any where I only have a dam on my baffle plate and do not have any issues, so i would say it is...

My costco brisket Pics. That was a big cook got the smoker going at 6.00 am then the Brisket in at 7.00 am, the cook took 11 hours the rested in esky for 1 hour. It was a 8kg piece of brisket and when i trimmed it i lost almost 2kg of fat, it was a a very successful cook my guests enjoyed it so much...

Also i would make the FB height at least 21" or 22" and have your grate at 18" and put a ash pan in and have you air intakes below your grate.

Today's cook Pork Ribs and Pork loin. My Smoker works a treat and now with the Tappecue set up it is fantastic. First cook done, thought i would start of easy and just smoke 2 chickens. The smoker was a amazing all worked sweet after i fixed the door. 250 is a good temp for all around smoking. I use it for anything that needs rendering. Just a update, smoker is now home in it's resting place. I did the first burn today and overall i am very happy. The temps were good easily was able to achieve 300 degrees Fahrenheit , in fact it actually got to 320 degrees Fahrenheit . The only issue i had was the heat on the fire box door the top ...

Update, almost done just a few tidy up jobs before painting frame and fixing wood decking for table top.
This week finished FB just need to weld up fire grate. I made the table foldable so when not in use just fold it down, will be getting timber decking for table top to match the wooden handles.
