First Brisket!

Decided to try my hand on a brisket over Mother's Day weekend. 12 lbs (after trimming) rubbed with SPGO. Smoked on Oak for 9 hours on the higher end (275-300). I have no tuning plates or deflector above my throats opening. My first Smoke, I saw temps at the FB hitting 415ish. That was one chimney of coals and 2 quarter log splits. Lost a few otherwise tasty wings to that inferno. Lessons learned.

If you were referring to the length of your stack at the end of your question, I would measure from the center of your 90 (your "take-off"). Example: my calculations called for a 14" long exhaust using 4" diameter pipe. I also used a 4" 90 coming off the cook chamber. The take off on a 4" 90 is 6". ...

First Smoke Wings

So I smoked for the first time ever on my newly built offset. Decided to go with some wings. Injected with a 1:1 of Franks Red Hot and Cajun Butter. Smoked for 3.5 hours at 250-275. Hit my internal temp (165F) then flash fried in peanut oil for 60s. Happy to announce that they turned out really nice...

Last details added today and now fabrication is COMPLETE! I used the spring handles from some old chipping hammers for the latch on the firebox door and the exhaust damper. Just a small update but progress is progress! Got the Cook Chamber grates fabbed up and installed. Got the much needed counterweight fabbed up and welded in place. There was a bit of guesswork involved here but the lid is now much easier to open.
