Much easier on the ground but can be done in place. Try putting a scrap piece of angle under the strap. I had great success with a bottle jack and a section of chain. Thanks for the feedback. I am definitely not going to punch holes in one again. It did not enhance the meat and may have pushed surface bacteria into the meat where they are harder to kill. I've always had luck cooking my turkeys at high heat, above 270 degrees. I have not had much luck with low and slow on turkeys as the breast tends to dry out and become rubbery.

First off, great build and sorry I'm late to welcome you aboard! as far as the squared off door size goes, PeteMazz made a calc for that under his calculators. Made my warming box damper. Works like a charm. Now I just need spring handle grips. Looking good. As far as the extra trailer space, here are some suggestions. You could build some type of wood storage. Maybe a cowboy cooker or some other sort of grill. Maybe a discatta.
