I feel like a smoker is just like a cast iron pan. You want to scrape it back down to metal... but no need to scour and shine. The cooking grates need to be scrubbed a little ... but also no need to shine and polish. In my opinion.

Additional question: My firebox is oversized. I decided to leave it large (200%) and promised to add crushed stone or sand and then firebrick to take up the additional volume. Rolled smoke for 18hrs yesterday. The new rig ran great. Temperature fluctuations were all manageable and the fire was easy to keep. Obviously I have some learning to do now, not just how the smoker runs and reacts but also I can begin working on producing better food. I am excited to do more. Here ...

I know you are excited about your first smoke but might I recommend you cook only one kind of meat for the first run? I like ribs for a new pit because it’s pretty forgiving and a fairly fast cook. I would agree with Towtruck that a small fire and the exhaust closed down some is probably going to be the right direction but only time will tell. I would recommend getting a notepad and keep some notes on what adjustments that you make and how the cooker responds. It's much easier than trying to ...

It ran so smooth while it was wide open, I have the feeling it will be just fine. Really just a matter of figuring out where all the adjustments need to sit for a standard BBQ session. Q-View incoming on Sunday. [emoji16]

Heat rises so it's leaving the cc the second it gets to the top. I would guess you will be running the stack control down to barely open in order to choke it down and hold heat. I'm thinking once warmed up a very small fire will be your friend with that stack damper being the key to even it all out...

Seasoning it this afternoon. We might sneak some ribs on there if we have time.

Next weekend however... we will be doing Pulled Pork, Brisket, Ribs, and Beer Can Chickens. I will absolutely post some photos.

Per towtrucks info... There is less surface area in a round pipe, less friction loss. I believe two round pipes would flow better than one long rectangle of the same internal volume. ... Im not sure if there is any real advantage to dual exhausts as opposed to a single one. If it has the correct/suggested internal dimensions, the smoke and heat will flow efficiently. You could also just turn the latch sideways and split the door down the middle. Have it open out to either side instead of up. It is prob easy enough to find the specs on those hydraulics tho.
