I used 4 pipe clamps on my double pan. My door was around 200 pounds and was a pain in the back, literally.

I have been using an UDS for almost 10 years, so he is my .02$ If you properly build an UDS, one basket can last very long time. Well' I managed to get the doors on, I still need to do the latches.

I couldn't wait to give it a try so I'm seasoning it now

Thanks, going to use an heatermeter with an RD25 damper. The blower will have up to 28cfm, so its should be plenty.

That's a lot of steel.

I too, well until they could not find them and they plasma cut them instead, the Firefox parts. Then a couple weeks later while picking up another batch of steel they gave me the missing laser cut parts. I wish I had waited for them, boy were they nicely cut.

If you are spatcocking, I don't think it really matters if you even brine it. The brine is ment to keep the chicken from drying out. Nice table, but I hope you don't drop anything, your toes may not survive, lol.

I saw that table while searching for tables, but my wife would kill me if I made one. So I had to settle with HF folding tables.

I have the same corner clamps, 3 of them in fact and found they are hard to keep a 90 be angle when you start welding the tubing. The tubes tend to twist some as the flats are not really the flat. I finally stopped using them altogether, as I was kinda lucky as my work had an scrap aluminum thermofo...

If you don't plan on going over 200°f then I guess cementboard would be ok. Looking at the manufacturers PDF they say not to be installed in places over 200°. I would think it would become brittle over time
