Every year, at our state fair, Turkey legs are a big hit. So, my grandmother needed a leg fix and I also tried one and I couldn't stand the hammyness of them. I too want my Turkey to taste like Turkey.

Look for a Weber grill with lid on Craigslist. Sometimes you can get lucky and find one for free or near free. Weber lids are the way to go on a UDS. Gives you much more room

Get a new soldering iron and a coffee can. Fill it with wood chips of your choice and make a hole small enough to insert the soldering iron in and route the cord through the ball valve. You might have to close down the outlet some

I wish the plans had it as removable, I too would have made it removable if it had been that way.

For those of us that followed the GF plans, is there a simple way to modify them to make the rebar removable. I sure would like to know also

It needs to go,. The orange layer is the dreaded barrier. You need to burn it or sand blast it out. Contrary to what you may think, barrels that have not had food in them are better, then barrels that have had contained food.

I just bought a bag of Roxul at home Depot for the tubing. It's much cheaper then using the Roxul board insulation and less time consuming.

Heater meter is the best. I have not used the fan yet but the web interface and ability to use whatever probe you want is by far the best option. I'm no expert, bit from my experience after building the Double pan GF, the way you have the firebox exposed to the outside wall , it will be super hot. I have mine isolated and it's still very hot in that location.

I also 2nd that you take a look at the Double Pan GF plans

I clean my racks when they get up to temperature with a good wire brush, before each smoke. As for the dripping down below, just a good wipe, to remove anything other then greese or oil. If it really gets bad then a good wash and dry and re-application of oil may be needed

I would not go over 400°. I noticed some odd sounds when I was in the 300 400 range. Also depending on how much you have in the smoker, you will consume large amount of charcoal. Just a heads up... probably don't weld the top tube by the chute yet. It makes getting the chute/firebox/diffuser assembly a whole lot easier without it.
