I am curious what a new nice UDS is worth to the public? That is if someone was going to build a few and put some up for sale.

Maybe I will do a quick pull and rip out most of the fat chunks then throw it in a bucket for the power puller.

I have having the same problem around here. There is one place 2 hours away and another place 4 hours away that has a bunch. With the lined barrels, a couple REAL hot fires and some sanding and its good to go.

When you used the drill attachment, how did you deal with all the fat? That is my main concern with using those. I like to get as much of the fat out as possible in the pulled pork.

Love the pork puller. I have been looking at one like it that sells online for around $60. I think that is much more reasonable. That smoker is just, whats the word again, WOW.

I will have 25-30 butts plus a few dozen turkey legs going on mine in a few weeks. How are you pulling all those. Thats the part I am freakin out about.

If you are going to use a solid diffuser plate (no holes) then you should be safe in the 4-5 inch range. But depending on how close your heat is to the plate, that may be to close and the 8" you sketched up top would be a good space.

I know I have seen a path style (amazin smoker) basket for charcoal. Something like that should help with a loooonnnnnggg burn smoke.
