I like just a creative smoke more than a whole meal. See it on the smoker and then on a plate. I just made some pulled pork tacos tonight. Absolutely awesome.

categories would be best but would have to keep a small number of them. Maybe UDS, SFB/RF and Box style smokers. Must post buildalong with some sort of proof of date to show it is a current build.

I like the build idea, but it would be hard to judge a small patio smoker to a big comp trailer rig to a UDS.

lesson learned today, I can put to much meat in the smoker. Having a very hard time getting temps up. This is going to be a real LOW and SLOW.

Now the fun part begins. Spent 3 hours last night prepping 32 frozen pork butts. All trimmed, sauced and rubbed. This morning they are all barely on the smoker. The size of the smoke stack and fire box all depends on the size of your cooker. Round works just fine as long as it is big enough. There are a few smoker size calculators online where you can enter you size data and it will tell you how big the fire box and smoke stack should be.

I just used the Comet trick and it worked great. I did it after after burning the barrel out first. It took all the remaining liner right out.

Putting the caulking on the inside of the joint of the two lids will help a lot. That is the main issue I have. The lid fits tight now but there are a couple dings in the ring on the barrel that I really don't want to try and pound out. I will caulk it up first and see how things are. I mainly need ...

Do you guys keep the exhaust closed down the whole time once it gets rollin? So pretty much you will have the whole thing shut down with maybe once inlet vent open or opened a little bit?

I made up one of those drill type power pullers over the weekend from a floor drain. Will put it to the test weekend.

We make a lot of sausage and salami and have a big hand crank mixer. I was thinking about giving that a try or modifying the mixer with some spikes on it to help out.
