Currently saving up for it. Got a cousin that works at a metal shop and he said he can get me "scraps"for a decent price. Also get a discount on the cutting. I'm planning on saving 3k, hopefully come in under budget but that never happens lol!

I do it every time. It shrinks the casing down and gives it a little snappier bite. Usually let them bathe for 10 minutes or so then hang in the fridge overnight. Then vac seal the next day.

Rytek Kutas has a great book on sausage making. Also check out Walton's Inc. They sell everything you need and have informative article too. Seasoning are great too, been using them almost 20years.

Thank you! It's my dad's. It's a little different design. Has a pipe from the firebox all the way to the front with holes facing down along it. He fills it up with water to just below the pipe. Never seen one like it. It works really well and actually the temps are only a few degrees difference from...

No worries. In my trade(industrial maintenance electrician) if you aren't giving or receiving hell from somebody they probably don't like you lol!

My biggest dilemma now is deciding between the new one Frank hasn't released yet and Mack lol!

So after rereading the Mack thread for the 5000th time I'm back to leaning towards it. Frank shows the wc running at around 160 with the cc at 250ish. That would be about perfect for me. How low can you reliably run these gravity smokers? Specifically the double pan. Debating on what I want to build and being able to run lower for smoking sausage is a big deciding factor for me. Havent got a chance to use it yet but our easy up type canopy has like a little mini canopy up top with a gap between them. If that makes sense? Anyway it would allow smoke to pass right out the top but still stay dry.

Not yet, we are still several projects behind. Look at the franktronic impulse build - that one is pellet drive but I know for a fact that you could build that with a charcoal/wood fire in the bottom and control it with a guru for very stable heat.... I did that on Edna and she wasn't even insulated like Frank's.... :D I can't find that one. Go...
