No sauce here, just a dry rub and sometimes i will do an injection.. smoked right and it will have all of the moisture it needs. I agree that adding some sauce after pulling from the freezer is ok though. When i sauce on the bun I like a mustard based sauce.

I recommend using the cheap shelf brackets from Lowes/HD etc. Just tack weld 3 of them to the inside of the drum. The actual shelf supports can be cut down to about 1 1/2-2 inches long and allows you to adjust the rack height as needed. Also makes it very easy to add additional racks. Not a great pi...

That lump was the ticket. No charcoal taste.And actually, the lump was pretty void of taste. And that smell when the drippings hit the diffuser plate.... How did you like the B&B lump? Actually they don't see very much heat at all, they don't even get warm to the touch. Mine are on 24" risers so they are closest to the heat and they stay cool. I think, (someone correct me if I am wrong) PVC sch40 is good until about 140 degrees. I doubt they were seeing anywhere near that. Just my...

Thanks everyone, I fired it up yesterday and put it through it's paces. I did ribs, brisket, and some beef shanks. Sorry, didn't get a chance to get any pictures. That wedge shaped thing is for indirect grilling. Let's you put the coals off to the side to keep the heat off of the food. Basically allows you to smoke in a kettle. You got a good deal. I just paid $18 just for the KBB and another $20 for a Weber grate.

I love Royal oak lump, I use it in my reverse flow and it seems to last a long time. I haven't used it in my UDS yet, only KBB like you bought. So far I am not a fan of the KBB. The RO lump Burns very clean, no smell other than the smell of fire... The KBB has a serious chemical smell until it gets ...

quick question for the experts... I have 2ea 2" bungs in the lid, right now i am using the one in the center of the lid. Would it be better to use the one that is on the edge of the lid under where my hinge is? My thought was by using the center one I would get more even temps and smoke distribution...

Paint is just a quart of Rust-Oleum high heat. Only used maybe a quarter of it. I have room for a cooler and a small stack of wood as well. I think it will do everything I need. But... I am starting on a 55gal UDS now

I would agree on making it a reverse flow. I just finished a 60 gallon reverse flow using almost the same tank you have. Mine works AMAZINGLY well.
