More oil... Coat the thing in oil then fire it up. You'll get a nice black patina on it. I like your difuser... looks familiar... :D

It had a real good coating of cooking oil. Managed to get about 12 hrs burn from my basket with about 6lb of briquettes

So I seasoned my uds yesterday and autotune my pid controller. A decent grit blaster can remove 99% of galvanizing. I do it at work. Takes a bit longer than normal rust/ millscale but still gets too Sa3 standard

I cut round mine an inch down from rim then flared the flange on the lid to slip over the top of the drum

About the paint.The UDS boys are using high temp paints with good success. They have run at 300-350° and have reported NO problems.A lot of the guys even have STICKERS on the sides of theirs! I have a small vac Pac machine I use for sealing hops when I'm brewing beer. Does anyone use a vac Pac to seal their meat in a marinade before they bbq?

And here I'm an apple cider vinegar guy...I use it to cut my BBQ sauces when I'm using it to baste and marinade too. It adds a tangy flavor that I like.
My oldest son is a chef and always says vinegar will cut through the fatty taste.
