It can definitely work. I've used store bought propane smokers with some success. The biggest issues I've had were #1 having an open flame at the bottom of a smoker is asking for a grease fire. This can be dealt with by being careful and you did mention offset implying the fire isn't directly under ...

A smoker that size takes the right buyer. I think it's probably worthwhile and if I were buying a smoker like that I'd want the warning cabinet. Finding a buyer is the real challenge here...

That came out great. I don't have the skills or tube guts to attempt a build line that. For some reason I always liked the idea of having my own wood fired pizza oven.

Welcome to the forum and thanks for your service. 500G is one heck of a start. Make sure to run all the numbers thru the calculator twice before you cut anything. With the welder buddy and this forum you are good to go.

The basket from UDS Parts is about 12x12x12 and is raised off the bottom 3in or so with an integral ash pan of sorts. Not a real big pan, but does the job. I actually bought a bundle of batt insulation from a guy off of the app Offer up . The plastic wrapper was torn some looked like it's been thrown around the garage a while. Lowes sells the stuff, but not always available at all stores. I bought rigid insulation from them, but had to travel to a diff...

Welcome. Start looking away other smokers to get ideas of exactly what you want and how big you need. Building a smoker can still get incredibly expensive, but will last forever. Do you have large propane tanks around there? If you can find the right size propane tank for cheap then that's an option

I bought the CNc plans, but most of the metal shops just didn't seem to know what to do with the cut file. May be worth asking your metal guy if it would be of any use
