Standard offset and reverse flow both work. I would vote reverse flow personally, but that's up to you. If your friend is just going to use it as a grill anyways then save yourself the trouble and don't build a firebox.

I'm a huge fan of the mig welders. Remember that you can run flux core wire in a MIG process which will let you weld in a light breeze. I'm a huge fan of the mig welders. If you get an mma one I would go for one that's an expert in jujitsu with a background in kickboxing as well.

Definitely not a conventional setup. It looks great and if you can make it work correctly then it will be a hit for sure. I would see if I could find one that works and get a hold look at it. Pictures and exact measurements if possible because rebuilding it won't be fun. Unfortunately the calculator...

Its basically an ugly drum smoker with less ugly. The science is pretty sound I bet it works well. I've never seen one in person or heard of them before so I can't say for sure

I think the main thing is practice. I haven't got enough practice to be good at it either. I have seen tools that hold a 4" grinder to use as a chop saw although kinda neat they only help for small cuts and those are not the difficult ones. Just be safe a broken wheel is scary.

Sounds like your ok Joe is running great. I would keep that thing the way it is since it holds 250F so well. I think you just need a separate grill/ santa maria setup for cooking hot. I would consider choosing either a propane grill or a smoker the hybrid units often don't work as well. No matter what you do be very careful with propane you could accidentally build a bomb. The burners are available I'm not sure where to get them because I've never built anything that needed one.
