Split it in the middle with a solid plate and make two fire box's, one for each half.......two smokers in one!!! You could even make one a reverse flow and the other an offset. Now THAT is funny! People have cut the tank and used part for a firebox or build two smokers from one tank. I say build the larger smoker and a square firebox. The giant smoker is more work to build and more expensive as well. I think if you are running a catering buisness the giant smoker is great advertising with so...

I'll follow along, I also have the free plans, but not ready to start yet. It's worth trying flap discs out for grinding. At first they look like they can't possibly compete with a regular grinding wheel but they may just surprise you.

Welcome aboard. Since you have some experience cooking and metal work this will be easy for you. Don't cheap out, build the one you really want. Make sure to use the calculator.

Is it just me or do your wife’s throw a wrench in any free time you think you have to work on your smoker? Kinda funny how we want bark, but some think it's burnt. Same issue I have trying to serve medium rare prime rib to certain family members. When they tell me it's raw.
I think mcboom is onto something with the above comment. Serve the customers a few beers first.

I think two stacks encourages the smoke to go both directions. Keeps the meat consistent left to right.

Sounds like you are over qualified for this build. Having a budy that builds tanks is a bonus as well. When changing the size of the tube just remember to increase size of fire box, stack. And throat to match. I'll be watching for all the pictures you are about to post.
