I usually finish them on the smoker and then place them on a plate and cover with foil long enough for them to cool down to eating temperature. I never shoot for an underdone rib and try to finish under the foil. I really don't think they need a rest at all and can go from smoker to plate in one sho...

I'm a baby back smoker kinda guy. Pull the skin and cut the racks in half to make them easy to handle. Full racks with the skin off want to fall apart on me. The larger cuts of ribs have too much meat for my taste. If I want more meat I will smoke a butt.

I used vermiculite to insulate my pizza oven. I used a cement binder just to stick it all together to my brickwork. It will transfer heat but it does it slowly. I think loose crumbs will do the same thing as the air in the mix will allow heat transfer. There is one way to check it though.....build a...

I don't cook for large crowds but will do smaller groups of 6-10 people at work and what works for me is timing everything to be cooked. Beef or pork can be wrapped and let rest while the chicken is finished off to be served right off the cooker. It just takes practice knowing when things will be do...
